Nut Bread

Another favorite recipe.  Great for breakfast or just a snack.  Any kind of nut can be used, although I tend to use chopped walnuts, since I have an overabundance of them.  I normally give half the loaf to my parents, who love it as well.

Nut Bread
Adapted From Better Homes & Gardens Cookbook

Prep: 25 minutes
Bake: 50 minutes
Oven: 350 degrees
Makes: 1 loaf

2 cups all-purpose flour
1 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 egg, beaten
1 cup milk
1/4 cup cooking oil
1 cup chopped nuts (almonds, pecans, walnuts) -add more or less to taste.

Note: To bring out the flavor of the nuts, toast them prior to adding into the batter.

Preheat oven to 350 degrees (F). Grease an 8x4x2 inch loaf pan.  In a large bowl stir together dry ingredients (flour, sugar, baking powder, salt).  Make a well in center of mixture.  Set aside.

In a medium bowl combine the wet ingredients (egg, milk and oil).  Add wet mixture all at once to dry mixture.  Stir until just moistened.  Fold in nuts.  Spoon batter into prepared pan.

Bake for 50-55 minutes or until a toothpick comes out clean.  Cool in pan on a wire rack for 10 minutes.  Remove loaf from pan and cool completely.

  1. Looks like a great recipe - nice find/post! Have you considered playing with natural sweeteners as an alternative to sugar and/or whole wheat flour?
